Since my family isn't feeling great, I did the crockpot whole chicken again. This matched up great with the kroger deals below.

Last night, we did Lentil Enchilada Lasagna
Here is the recipe... sorta
1. Make the Lentil mixture

2. Layer in a baking dish: flour tortillas, Lentil mix, cheese, Enchilada sauce
3. Finish with a layer of enchilada sauce and cheese
4. Bake in oven for 15-20 minutes at 375 degrees
Enjoy... I love this one because it requires no thawing out meat... just pull out the lentils and rice and cook away!
